Hummingbird {cup}cake{s}…

I’d never heard of Hummingbird Cake before until I heard about it on an episode of the t.v. show, Cupcake Wars.

I guess it’s a popular cake in the south. The batter has mashed bananas, crushed pineapple, and chopped toasted pecans in it.

A few days after hearing about Hummingbird Cake,  I clicked over to call me cupcake and there was a recipe for it with the most mouthwatering photos.  I swoon over lovely food photos.

I decided to make Hummingbird Cupcakes for Father’s Day dessert.  I used the recipe on call me cupcake, minus the banana filling.  For the frosting I made a basic cream cheese frosting, (1/2 cup butter, 8 oz. cream cheese, 1 teaspoon vanilla, 2 lbs. powdered sugar), except I used a few tablespoons of pineapple juice to get it the right consistency instead of milk, which is what I would normally use.

The Hubs and I both thought this cupcake was absolutely FANTABULOUS!

    Looks delicious! DD and I found a lovely cupcake bakery while exploring yesterday.
    Hummingbird cake is very popular here, but I've never made it. These may be my first attempt!

    Hummingbird cake is one of my very favorites! I have a recipe for it on my blog too, but these cupcakes are too cute!! Very pretty pictures and I love the plate they are sitting on, as well. :)

    Oh I have had hummingbird cake years ago...this would be great to do for my little one, he has been asking for cupcakes and would so enjoy the name, since we have been watching a hummingbird in our yard all season....thanks

    What beautiful things you won! How nice! The cupcakes sound wonderful! I'm ready for a good recipe. I've gone to tons of weddings this season and I'm so sorry to say that all of the cakes were just awful! How can this be? I need a little something to make up for it. Isn't 'call me cupcake' the funnest blog?

    I love hummingbird cake, and I actually like to make cupcakes more than I like to make cakes so I plan to try this recipe. It looks delicious!
