When I saw this at the Goodwill…
my heart went pitter-pat.
A Meakin Ironstone Transferware platter!
The cost, only $6.99. Woot!
I decided to bake something yummy to put on my pretty platter.
Some multigrain muffins with dried fruit in them fit the bill, since I had some dried fruit I wanted to use up.
First I chopped up about 1/2 cup dried strawberries…
and chopped up about 1/2 cup dried apricots…
and chopped up about 1/2 cup of walnuts, adding them to the fruit.
Next I stirred the dry ingredients into the dried fruit,
which helps distribute the fruit evenly through though the muffins.
1 cup whole wheat flour
1/2 cup all purpose flour
1 cup oat bran
2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
Add two eggs and one egg white lightly beaten
1 1/4 cups buttermilk (I used skim milk with plain yogurt whisked in it since I didn’t have buttermilk)
1 tablespoons vegetable oil
1/2 cup brown sugar
I made my own parchment paper wrappers like Tidymom and Sarah from a beach cottage.
Don’t the muffins look pretty on my new platter?
These muffins are delicious!
They aren’t overly sweet, but sweet enough to be good.
The crunchy nuts, whole grains, and chewy dried fruit give them great texture.
And they are healthy!
They look pretty on my transferware dishes too!

Yes they DO. Did you dry your own strawberries? LOVE the platter. You find the best STUFF.
