Baked oatmeal…who knew?

I first saw baked oatmeal on Tammy’s recipe blog.

I had never heard of baked oatmeal before, but it looked interesting, and a new fairly healthy breakfast idea is always welcome.

As I’ve said before, I think just about the only recipe I’ve ever made and followed exactly is

Julia Child’s Boeuf Bourguignon Recipe. 

So, as usual,  I made some of my tweak’s to Tammy’s recipe for Baked Oatmeal.

Here’s what I did:

1 1/2 cups old-fashioned oats

1/4 cup oat bran

1/4 cup ground flaxseed

1/2 cup brown sugar

1 tsp. baking powder

3/4 tsp. salt

1 tsp. cinnamon

1 tsp. vanilla

2 lightly beaten eggs

3/4 cup milk

1/4 cup melted butter

1/2 cup raisins

1/2 cup chopped walnuts

Stir all of the above together.  Spread into a non-stick sprayed 9x13 pan.

Bake at 350 for 25-30 minutes until crusty on top and golden on edges.

It is delicious for breakfast, served warm with a little milk or half and half on top.

The Hubs loved it!

  2. I'm going to make this. I wonder if you can use chia instead of flax seed. hmmm. I feel a tweak coming.

  3. I'm an oatmeal lover so I've tried it every way I can think of. Baked is one of my favorites. This is slightly different from what I use. Can't wait to try it out.

  4. We are HUGE fans of baked oatmeal here! Mine rises a bit more....and I like it 'cause the 2 of us can eat off of 1 pan all week long. Just heat it up in microwave, pour a little milk on it along with whatever toppings - dates, raisins, apples, walnuts, etc.
