Savoring summer’s end…

Traditionally school where we live resumes after Labor Day weekend.
In my mind that weekend has always been summer’s last hurrah.
So, don’t make me think about back to school, fall décor, Halloween, or any of autumn’s festivities ‘til September 6th.  I’ll just dig in my heels and tell you, there’s still some summer to be savoring…

crisps and cobblers to make…

{Combine 2 quarts blackberries or marionberries with 1 –1 1/2 cups sugar, (depending on sweetness desired), 5 Tablespoons cornstarch and 1 teaspoon vanilla and cook over medium heat until thickened.}

{Cut 1 cup cold butter into 1 1/2 cups brown sugar, 2 cups oats, 1 1/2 cups flour, 1/2 teaspoon salt, 1 teaspoon baking powder.  Spread half of crumb mixture into a greased 9x13 baking dish.}

{Spread berry mixture over the the bottom layer.}

{Top with remaining crumb mixture.}

{Bake at 375 degrees for about 40 minutes until golden brown.
Delicious served warm with a scoop of good vanilla ice cream.}

    I wish I could extend summer at the beach! Going back this weekend and the weekend after. Afraid I may not come home again!
