I am a blessed woman.
Every morning the Hubs makes the coffee and brings me a cup in bed.
On our day off, he usually brings me breakfast in bed too.
When our three daughter’s were young, on Saturdays he would bring all four of us breakfast in bed!
Even our little, not quite three year old, granddaughter has had one of Papa’s famous breakfasts in bed.
So, on our day off last week I turned the tables on him and treated him to breakfast in bed.
I made soft boiled eggs and multi-grain blueberry orange muffins.
He loved it, especially the muffins!
Multi-grain Blueberry Orange Muffins
In a mixing bowl whisk together the following dry ingredients to avoid clumps:
1 cup whole wheat flour
1/2 cup all purpose flour
1 cup oat bran
1/2 cup brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
Add the wet ingredients, being careful to not over mix:
2 eggs and 1 egg white lightly beaten
1 Tablespoon vegetable oil
1/2 cup light sour cream
3/4 cup milk (I used skim milk)
Add 1 tablespoon orange zest
Gently fold in about 1 cup of blueberries
Fill muffin cups 3/4 full
Bake in preheated 375 degree oven for 20-25 minutes

ReplyDeleteYou know... I have never liked Breakfast in bed... I think hubby and the kids brought it to me once ...and it was not my thing!?
