It must be oatmeal week!
Earlier this week I shared Mama's oatmeal cookie recipe with you.
It's really "I remember Mama week".
My siblings and I and our kids and grandkids are having a family reunion.
Mama's enjoying herself in heaven for almost three years now,
but my siblings and I will enjoy sharing memories along with some of Mama's tasty treats we grew up eating.
Here's the original recipe in Mama's beautiful handwriting.
(The oatmeal cookie recipe was in my printing, copied by me onto a recipe card when I was a teen.)
You'll see that the recipe calls for quick oats.
I only had old-fashioned oats, but a quick whir in the food processor and they work the same.
While the oats soaked in the water,
I creamed the sugar and butter and eggs.
Once the cake is baked and cool, it's time to make the broiled topping.
(Before removing the cake from the oven, be sure to test the cake's doneness by inserting a toothpick.
If it comes out clean, it's done.)
I recommend using pecans or walnuts when the recipe says 1 cup of nut meat.
(I think nut meat sounds funny.)
I used walnuts this time.
They should be chopped not whole.
Here's what it looks like when it is heated until bubbly.
Oh, I could eat this by itself.
It's hot, hot, hot, though, so don't go trying a spoonful!
(Oh! What would this be like on top of ice cream?!)
This is what it looks like before it gets broiled.
And this is what it looks like after it's broiled.
Do not put it too close to the broiler element or leave it when it's under the broiler.
For me, it took only about 3 minutes not 5 as the recipe indicates.
It all depends on how hot your broiler is and how close the pan is to the element.
(Do not let it scorch! Burned nuts do not taste yummy!)
And voila!
Moist, yummy, delicious!

I'm going to make your Mama's cake recipe this weekend! My Mother's recipe cards and cookbooks, with all her handwritten notes, are some of the things I cherish most. She's been in Heaven for over 2 years. I didn't like fruitcake growing up, but because I had her recipe, I made one last Christmas. It was delicious! I even sent a cake to my sister in Washington State, she said it tasted just like Mothers! Thanks for the recipe!

I have to share that what really caught my eye was your mom's handwritten recipe. I probably have a hundred in my cupboard that are all written the same way...same script with the funny "t", same weathered 3x5 card. Love it. Thanks for sharing! Nancy =)
ReplyDeleteI'm so happy to "meet" you too, Nancy! Mama's handwriting was always so lovely...only at the very end did it get a bit wobbly, which made me sad.
DeleteWell, I must thank you for this recipe. I made it today and it is wonderful. Since it is just my husband and I now,(empty nesters) I cut a lot of it up in individual servings and froze so that I can take a piece out from time to time and not pig out all at once. Otherwise I could see me picking at it until it was gone it is so good.
