Today was a day to stay home and spend the bulk of the day studying for the Mother's Day
message that I am giving at our church.
First I did my regular devotions, caught up on some email correspondence, sent some texts,
and took some phone calls.
The whole time my brain was thinking of an idea for a soft lemon sugar cookie.
I knew that it would be futile to put my nose to the grindstone and study until I got those cookies off of my mind.
Now mind you, my husband isn't supposed to eat sugary treats, and I really don't need the extra calories either,
so after I finished the one with the bite in it in the photo above, enjoying it immensely with a cup of my favorite tea, the rest went into the freezer to be enjoyed by our church leadership at a retreat this weekend.
They turned out soft and buttery and lemony, just like in my imagination.

DeleteHi Elizabeth! What an honor to talk about mothers on Mothers Day! And the restraint that you showed with eating just one cookie, and saving the others to share is so much like motherhood, isn't it? Mom's make sure there's enough for the family, and gives up a lot in the process.

DeleteSounds wonderful! You have such self discipline. Sometimes when I'm dying for sweets but don't want to over indulge, I bake and we eat some then take the rest to neighbors. :)

ReplyDeleteYou can actually order the cup from Amazon, just search for Cath Kidston mushroom cup. But mine actually came from the Cath Kidston store in London's Heathrow airport. The hubs knows I love her stuff, so popped in there on his layover when he was returning from a missions trip to Ghana.
